Antler Baking Co. has opened up in the Flatiron Building in downtown Bellingham, and the space will be shared with Woods Coffee. Antler Baking was established by local baker Veronica Spaulding Stendahl in June of 2017. Shortly after, she was accepted into the Bellingham Farmers Market and began selling giant cakes, pies, and other treats by the slice.
While at the Farmers Market she became acquainted with CEO of Woods Coffee, Wes Herman the whose wife loved her famous southern carrot cake. When she expressed that her next business move down the road would be to open a small storefront, an amazing opportunity was presented.
Woods Coffee was looking for another business to occupy a small space inside their Flatiron location that would complement their coffee. What goes better with coffee than amazing triple layer cakes and pies.
“I am so excited about this opportunity, the Flatiron location is right in the center of all the downtown entertainment which is perfect for all those folks who need some cake in their life and some local fun," Stendahl said. "I want my shop to brighten peoples day, but also to let them experience new flavor combinations and exceptional cake."
All of Antler’s cakes and pies are designed based on what is in season and is sourced locally as much as possible. For example, this summer Veronica canned local blackberries with tequila to make her popular “Party Cake” which entails 6 layers of fresh lemon cake with blackberry tequila puree and vanilla buttercream (of course using her own homemade vanilla extract.)
“As a past bartender, I love using all kinds of alcohol and infusions in my desserts, I mean who doesn’t love a little tequila,” says Stendahl.
Antler Baking Co. is officially open for business at 10 Prospect St., Bellingham, Wednesday through Saturday. Antler is also booking for the 2018 wedding season and is available for custom cakes for any celebration or just because you need a whole cake.
