Diamond Jim's Grill in Bellingham

A friend and I were trying to decide where to meet for breakfast in Bellingham, when her teenage son suggested Diamond Jim's Grill. We were up for adventure and decided to give it a try. This place used to be tiny, but not anymore. Diamond Jim's Grill recently moved to Meridian Street to a much bigger space. This is appropriate since its meals are HUGE! One pancake covers an entire plate. AND it is delicious. I had the  Spanish omlette. It must have been made with a half-dozen eggs. A mouth-watering array of cheese and peppers spilled out of it, and a giant pile of hashbrowned potatoes rivaled its size. Needless to say, we left full, and very happy. Definitely put Diamond Jim's on your agenda before a day of hiking, biking, kayaking or skiing at Mt. Baker.
