Keenan's at the Pier Announces New Executive Chef!

Eli Cobb is the new Executive Chef at Keenan’s at the Pier inside The Chrysalis Inn & Spa. He is a classically trained chef and a graduate of the French Culinary Institute, with over 25 years of experience in the kitchen.

Chef Cobb’s approach to cooking is rooted in the flavors of the Pacific Northwest. He was taught to use local ingredients to showcase the uniqueness of our region, and believes that guests who come to visit Keenan’s are looking for that authentic Pacific Northwest experience. Whether inspiration comes from French, Italian, or Asian cuisine, he tries to use ingredients from our own backyard. New Fall/Winter menus were released this month at Keenan’s with dishes that include Beignets, French Onion Grilled Cheese Sandwiches, and Northline Fisheries Wild Sockeye. For Chef Cobb food is about connection: to the land, to the people who grow and gather it, and to the guests who come to share it. 

When not in the kitchen, he loves spending time in nature, playing the bass, and enjoying life at home with his wife, our dog, and two cats. 

        We acknowledge that Whatcom County is located on the unceded territory of the Coast Salish Peoples. They cared for the lands that included what we’d call the Puget Sound region, Vancouver Island and British Columbia since time immemorial. This gives us the great obligation and opportunity to learn how to care for our surrounding areas and all the natural and human resources we require to live. We express our deepest respect and gratitude for our indigenous neighbors, the Lummi Nation and Nooksack Tribe, for their enduring care and protection of our shared lands and waterways.
