Lighthouse Bar & Grill at Hotel Bellwether Releases New Summer Menu

The Lighthouse Bar & Grill at Hotel Bellwether in Bellingham, WA is thrilled to announce the release of their new summer menu. The waterfront restaurant leads the region in serving fine Northwest cuisine specializing in meticulously chosen and locally sourced ingredients. Executive Chef Michael Grogan has created a delicious selection of menu items ranging from land to ocean. New featured dinner items include a Baked Brie starter wrapped in phyllo with a house made jam, Alaskan Halibut with a truffled celery root puree, and a tender Maine Lobster Tail. Gluten-free Blueberry Pancakes are a special new breakfast item and the Seafood Panzanella Salad and Clam and Prawn Linguini are just a couple of the delicious new items one will find on the lunch menu. The restaurant has expanded its Lounge menu with fun, gluten free items such as Moroccan Lamb Lollipops and an enticing Pulled Pork Sandwich featuring a Carolina style BBQ sauce. With high-quality menu items, scenic waterfront views, daily happy hour, live music performances five to six times per week and elegant ambiance, the Lighthouse Bar & Grill has something for everyone. “It is a pleasure to work with Chef Grogan who continues to expand his innovative Northwest cuisine,” says Jim Haupt, Hotel Bellwether General Manager. “The Lighthouse Bar & Grill’s dining offerings and table service has reached new heights. We are very proud of our culinary team and are excited to expand our services to the Waterfront Terrace during the summer months.” The Lighthouse Bar & Grill also features a well-rounded and rotating wine menu featuring local and imported wines. “We are excited to welcome our guests and assist with pairing the perfect wine with our new menu items. The perfect meal is awaiting and sure to please,” Dewispelaere-Rusch said.

We acknowledge that Whatcom County is located on the unceded territory of the Coast Salish Peoples. They cared for the lands that included what we’d call the Puget Sound region, Vancouver Island and British Columbia since time immemorial. This gives us the great obligation and opportunity to learn how to care for our surrounding areas and all the natural and human resources we require to live. We express our deepest respect and gratitude for our indigenous neighbors, the Lummi Nation and Nooksack Tribe, for their enduring care and protection of our shared lands and waterways.
