Semiahmoo Resort, Golf, and Spa Welcome Micah Windham as New Executive Chef

Semiahmoo Resort, Golf, and Spa, a casual seaside resort surrounded by the Salish Sea and managed and operated by Columbia Hospitality, has announced the appointment of Micah Windham as executive chef. He will be leading the culinary team for property’s three on-site restaurants, Packers Kitchen + BarGreat Blue Heron Grill and Seaview Café. Packers Kitchen + Bar is a favorite dining destination among locals and visitors featuring fresh seafood, handcrafted pizzas, specialty cocktails and more. At Great Blue Heron Grill and Seaview Café, Chef Windham will oversee the invigoration of new menu items with local, fresh ingredients.

As executive chef, Windham will continue the tradition of locally sourced menu options that provide support to farm-to-table co-ops and farmers markets and creating an authentic Pacific Northwest dining experience.

Chef Windham brings a wealth of knowledge to Semiahmoo Resort, with over 25 years of culinary and restaurant management experience. He began his career in 1996, where he worked his way up to chef de cuisine at Salish Lodge & Spa, which became a Columbia Hospitality managed property during his time there, located in Snoqualmie, Wash. He moved to Florida in 2008 and managed multiple restaurants and country clubs across the state for over 10 years. Most recently, Chef Windham held the title of chef de cuisine at Sawgrass Country Club, in Ponte Vedra, Fla.

During his years in the culinary industry, he became known for his passionate understanding of regional cuisine and ability to cultivate partnerships with local farmers and purveyors to serve the highest-quality dishes.

Originally from Snoqualmie, Wash., Windham attended Seattle Central College, where he studied culinary arts and hospitality management. Chef Windham recently moved back to Washington and currently resides in Bellingham, where he enjoys fishing, foraging, gardening and spending time with his wife Cailey and their four daughters.

Packers Kitchen + Bar is open daily for brunch from 9:00 a.m. to 3:00 p.m.; happy hour is from 3:00 to 4:00 p.m. The on-site restaurant offers dinner Sunday through Thursday from 4:00 to 9:00 p.m. and Fridays and Saturdays from 4:00 to 10:00 p.m. For dining reservations at Packers Kitchen + Bar, click here.
